Whipped Cream Pound Cake Recipe

Serves 6-8

Ingredients:

  • 1-1/2 cups sifted flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup whipping cream
  • 1 cup superfine sugar
  • 2 large eggs, slightly beaten
  • 1 teaspoon vanilla

Instructions:

  1. Preheat oven to 350°.
  2. Sift flour, baking powder and salt together and set aside.
  3. Whip the cream until thickened but not enough to hold a peak.
  4. Fold in sugar and then the eggs and vanilla.
  5. Add dry ingredients and gently fold into batter, being careful not to overmix.
  6. Turn into a small loaf pan (8-1/2″ x 4-1/2″) which has been buttered and dusted with super-fine sugar.
  7. Bake for 55 minutes or until sides of cake begin to leave the sides of the pan.
  8. Cool on a rack before removing.
