Grapenut Pudding Recipe

Serves 6

Ingredients:

  • 2 cups milk
  • 1/2 cup grapenuts (not flakes)
  • 3/4 cup sugar
  • 2 eggs, beaten
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • ice cream or whipped cream for garnish

Instructions:

  1. Preheat oven to 350°.
  2. Scald milk, and add grapenuts.
  3. Set aside to soak until grapenuts are softened (about 5 minutes).
  4. Add the sugar, eggs, salt and vanilla.
  5. Stir to make sure sugar is dissolved.
  6. Pour mixture into a well-greased souffle dish or 9″ round layer pan.
  7. Bake for 45 minutes. Pudding will puff up while it is baking, and is done when a knife inserted in center comes out clean.
  8. Serve warm with ice cream or sweetened whipped cream.
