Pecan Roll Recipe

Ingredients:

  • 7 eggs, separated
  • 3/4 cup sugar
  • 1-1/2 cups ground pecans
  • 1 teaspoon baking powder
  • confectioners’ sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla

Instructions:

  1. Preheat oven to 350Ā°.
  2. Brush a jelly roll pan (10″ x 15″) with oil, line with waxed paper and grease paper.
  3. Beat egg yolks with sugar until pale yellow in color and thick enough to fall in ribbons when beater is lifted.
  4. Beat in pecans and baking powder.
  5. Beat egg whites until stiff and fold into yolk mixture.
  6. Spread batter in prepared pan and bake 15-20 minutes or until golden.
  7. Cool in pan.
  8. When cool, cover with a damp towel and chill.
  9. Dust cake generously with confectioners’ sugar and turn out on a board covered with 2 overlapping sheets of waxed paper.
  10. Carefully strip paper from bottom of cake.
  11. Whip cream.
  12. Add vanilla and sweeten with sugar to taste.
  13. Using paper to help, roll up cake and slide onto a flat serving platter.
  14. Sprinkle with more confectioners’ sugar.
