Lemon Bars Recipe

Ingredients:

Crust

  • 2 cups flour
  • 1/2 cup sugar
  • 1 cup butter

Filling

  • 2 cups sugar
  • 1/3 cup lemon juice
  • 1/4 cup flour
  • 1/2 teaspoon baking powder
  • 4 eggs, beaten
  • few drops yellow food color (optional)
  • confectioners’ sugar (optional)

Instructions:

  1. Preheat oven to 350 degrees.
  2. Mix flour and sugar together, then cut in butter as for pastry.
  3. Press into bottom of a 9″x13″ baking pan and bake 20-25 minutes or until lightly browned.
  4. While the crust is baking, prepare the filling.
  5. Mix all the filling ingredients (except confectioners’ sugar) together and pour over baked crust.
  6. Return to oven and bake for an additional 25 minutes.
  7. Cool completely before cutting into squares.
  8. Dust with confectioners’ sugar.
