Pineapple Meringue Cake Recipe

Ingredients:

Cake

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 4 egg yolks
  • 1 cup cake flour, sifted
  • 2 teaspoons baking powder
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla
  • 5 tablespoons milk

Topping

  • 4 egg whites
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 3/4 cup nuts (optional)

Filling

  • 1 cup heavy cream
  • 1 cup crushed pineapple, drained
  • 1/4 teaspoon vanilla
  • 1-1/2 teaspoons confectioners’ sugar

Instructions:

  1. Preheat oven to 350°.
  2. Cream shortening and 1/2 cup sugar.
  3. Add egg yolks and mix thoroughly.
  4. Add cake flour, baking powder and salt alternately with 1 teaspoon vanilla mixed with milk.
  5. Pour into 2 heavily greased 9″ cake pans.
  6. Beat egg whites until stiff, then add 1 cup sugar and 1 teaspoon vanilla (and finely ground nuts, if desired).
  7. Spread half of whites on each cake layer.
  8. Bake until topping is brown (about 20-30 minutes), then remove from oven.  Cool.
  9. Whip the cream.
  10. Add crushed pineapple, 1/4 teaspoon vanilla and confectioners’ sugar.
  11. Invert one of cake layers (meringue on bottom) and spread with pineapple filling.
  12. Top with second layer (meringue on top).
