Cheese Pie Recipe

Ingredients:

Cookie Crust

  • 3/4 package Lorna Doone cookies (28 cookies)
  • 1/4 cup butter, melted

Filling

  • 2 eggs
  • 2 8-ounce packages cream
  • cheese, softened
  • 1 teaspoon vanilla
  • 1/2 cup sugar
  • cinnamon

Topping

  • 1 cup sour cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla

Instructions:

  1. Crush cookies and mix with melted butter.
  2. Press into a 9″ pyrex pie plate to form a crust.
  3. Set aside.
  4. Preheat oven to 375°.
  5. Beat eggs at low speed with electric mixer.
  6. Add cream cheese, vanilla and 1/2 cup sugar.
  7. Beat until creamy.
  8. Pour into pie shell and bake for 20 minutes.
  9. Remove from oven and while still warm, sprinkle with cinnamon.
  10. Allow to cool.
  11. Preheat oven to 375°.
  12. Mix sour cream, 2 tablespoons sugar and vanilla and carefully spread over cinnamon-topped cheese pie.
  13. Bake pie an additional 5 minutes.
  14. Remove from oven and allow to cool slightly.
  15. Refrigerate for 24 hours.
