Grandmother’s Jumbo Raisin Cookies Recipe

Ingredients:

  • 1 cup water
  • 2 cups seedless raisins
  • 1 cup shortening
  • 2 cups sugar
  • 3 eggs, beaten
  • 1 teaspoon vanilla
  • 1 cup chopped nuts (optional)
  • 4 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons salt
  • 1-1/2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon allspice

Instructions:

Note: This recipe makes jumbo cookies.  Reduce baking time for smaller cookies.

  1. Preheat oven to 375°.
  2. Boil water and raisins together for 5 minutes.  Let cool.
  3. Cream shortening and sugar.
  4. Add eggs and beat well.
  5. Add vanilla and cooled raisin mixture, and nuts, if desired.
  6. Sift together the flour, baking powder, soda, salt and spices.
  7. Add to the raisin mixture and blend well.
  8. Drop by heaping teaspoonfuls on a greased cookie sheet and bake for 15 minutes.
