Pavlova Recipe

Square

Named for the Russian dancer, this very elegant dessert is a favorite in New Zealand and Australia.

Serves 10

Ingredients:

  • 3 egg whites
  • 1 cup plus 1 tablespoon superfine sugar
  • 1 teaspoon vanilla
  • 1 teaspoon cornstarch
  • 1 teaspoon vinegar
  • 1/2 pint whipping cream, whipped
  • 1 pint strawberries, washed, hulled and sliced OR kiwi fruit, peeled and sliced

Instructions:

  1. Preheat oven to 350 degrees.
  2. Beat egg whites until soft peaks form.
  3. Gradually add half the sugar, beating until meringue is glossy.
  4. Add vanilla, cornstarch and vinegar.
  5. Fold in remaining sugar and spread meringue in a circle (about 9″ diameter) on a lightly greased baking sheet.
  6. Bake for 5 minutes.
  7. Reduce heat to 250 degrees and bake for 1-1/2 hours more.
  8. Let meringue cool, then mound fruit in the center and top with whipped cream.
