Frosty Strawberry Squares Recipe

Serves 10-12

Ingredients:

  • 32 chocolate wafers (8-1/2 ounce package)
  • 3/4 cup butter
  • 2 egg whites, beaten
  • 2/3 cup sugar
  • 1 package (10 ounces) frozen strawberries
  • 2 tablespoons lemon juice
  • 1 cup whipping cream

Instructions:

  1. Crush wafers.
  2. Mix with melted butter and press into bottom of lightly greased 13″ x 9″ x 2″ pan (save a few crumbs to sprinkle on top of dessert).
  3. Combine beaten egg whites, sugar, berries and lemon juice, and beat with an electric mixer at high speed until stiff peaks form (about 10 minutes).
  4. Whip cream and fold into mixture.
  5. Pour over wafer crust, then top with remaining crumbs.
  6. Freeze 6 hours or overnight.
  7. Cut into squares.
