Fresh Peach Pie Recipe

Since this is a one-crust pie, either halve the crust recipe or follow directions and store half in refrigerator.  A few apples and raisins added to the peaches taste delicious, too!

Serves 6-8

Ingredients:

Crust

  • 1-1/2 cups flour
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 3/4 cup shortening
  • 3 tablespoons cold water

Filling

  • 6-8 peaches, sliced
  • 1/3 cup butter
  • 1 cup sugar
  • 1 egg, beaten
  • 1/3 cup flour
  • 1 teaspoon vanilla

Instructions:

  1. Sift flour, sugar, salt and baking powder.
  2. Cut in shortening and mix until dough has consistency of peas (or smaller).
  3. Add cold water and mix together to form dough.
  4. Roll out half of dough to cover pie tin.
  5. Preheat oven to 375 degrees.
  6. Put peaches in pie shell.
  7. Cream together butter and sugar.
  8. Add egg, flour and vanilla and mix well.
  9. Spread mixture over peaches.
  10. Bake about 1 hour or until thick in center.
