Serves 8

Ingredients:

  • 5 whole eggs
  • 5 egg yolks
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/2 teaspoon baking powder
  • 1 cup cocoa
  • 4 ounces butter, melted
  • 2 ounces sweet chocolate
  • 1/2 cup simple syrup flavored with a drop of kirsch (see note below)
  • 1 pint heavy cream, whipped and flavored with 2 tablespoons kirsch
  • 1 can (16 ounces) pitted black bing cherries

Instructions:

  1. Preheat oven to 350°.
  2. Beat eggs, egg yolks and sugar together.
  3. Blend in flour, baking powder and cocoa.
  4. Add melted butter and mix well.
  5. Butter an 8″ x 2″ cake pan.
  6. Pour in cake mixture.
  7. Bake for 25-30 minutes or until a cake tester inserted in the middle comes out clean.
  8. Turn cake out onto a rack and allow to cool.
  9. When completely cool, slice into 3 layers.
  10. Spoon flavored simple syrup over each layer and allow to soak in.  Note: Simple syrup is made by boiling 1 cup sugar and 2 cups water together for 5 minutes.  Cool and flavor as desired.
  11. Place 2 heaping tablespoons of the whipped cream on each layer, and smooth over with a flat knife or spatula.
  12. Drain cherries well and place half of them on bottom layer of cake.
  13. Place second layer on top and add remaining cherries.
  14. Place third layer, cream side up, on top.
  15. Smooth the balance of the whipped cream over the top and sides of cake.
  16. Shave sweet chocolate with a vegetable peeler and sprinkle over top and sides of cake so that it adheres to whipped cream.
  17. Refrigerate until served.
