Apricot Cheese Delight Recipe

Ingredients:

Filling

  • 1 large can (29 ounces) apricots
  • 2 3-ounce packages orange gelatin
  • 2 cups boiling water
  • 1 large can (20 ounces) crushed pineapple, drained
  • 1 cup miniature marshmallows

Topping

  • 1/2 cup sugar
  • 3 tablespoons flour
  • 1 egg, beaten
  • 1 cup apricot juice
  • 1 tablespoon butter
  • 1 cup whipping cream
  • 3/4 cup grated cheddar cheese

Instructions:

  1. Drain apricots, reserving enough juice to make 2 cups.
  2. Chop apricots.
  3. Dissolve gelatin in boiling water.
  4. Add 1 cup apricot juice.
  5. Chill until slightly thickened.
  6. Add apricots, pineapple and marshmallows.
  7. Pour into an 8″ square dish and chill until firm.
  8. Combine sugar and flour.
  9. Add egg, reserved apricot juice and butter.
  10. Cook in top of double boiler until thick.
  11. Using a wire whisk, stir well so lumps won’t form.
  12. Remove from heat and cool thoroughly.
  13. Whip cream and fold into cooled mixture.
  14. Spread over top of congealed apricot mixture.
  15. Sprinkle with grated cheddar cheese just before serving.
