Make Ahead
Serves 6-8
Ingredients:
- 1-1/2 cups sifted flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup whipping cream
- 1 cup superfine sugar
- 2 large eggs, slightly beaten
- 1 teaspoon vanilla
Instructions:
- Preheat oven to 350°.
- Sift flour, baking powder and salt together and set aside.
- Whip the cream until thickened but not enough to hold a peak.
- Fold in sugar and then the eggs and vanilla.
- Add dry ingredients and gently fold into batter, being careful not to overmix.
- Turn into a small loaf pan (8-1/2″ x 4-1/2″) which has been buttered and dusted with super-fine sugar.
- Bake for 55 minutes or until sides of cake begin to leave the sides of the pan.
- Cool on a rack before removing.
