Sour Cream Pudding Recipe

Serves 6

Ingredients:

  • 2 teaspoons unflavored gelatin
  • 1/2 cup cold water
  • 1 cup heavy cream
  • 3/4 cup sugar
  • 1 cup sour cream
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • raspberries or other fruit, according to availability
  • whipped cream for garnish

Instructions:

  1. Sprinkle gelatin over cold water and let stand for 5 minutes.
  2. Warm heavy cream and sugar in top of double boiler and remove from heat.
  3. Add gelatin and stir until blended.
  4. Put into refrigerator to chill for 1 hour.
  5. When mixture thickens, whip until stiff.
  6. Fold in sour cream.
  7. Add salt and vanilla.
  8. Pour into a greased mold, or individual parfait glasses, layering pudding with raspberries.
  9. Top with whipped cream and a few more raspberries.
