Make Ahead
Serves 6
Ingredients:
- 2 teaspoons unflavored gelatin
- 1/2 cup cold water
- 1 cup heavy cream
- 3/4 cup sugar
- 1 cup sour cream
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- raspberries or other fruit, according to availability
- whipped cream for garnish
Instructions:
- Sprinkle gelatin over cold water and let stand for 5 minutes.
- Warm heavy cream and sugar in top of double boiler and remove from heat.
- Add gelatin and stir until blended.
- Put into refrigerator to chill for 1 hour.
- When mixture thickens, whip until stiff.
- Fold in sour cream.
- Add salt and vanilla.
- Pour into a greased mold, or individual parfait glasses, layering pudding with raspberries.
- Top with whipped cream and a few more raspberries.
