Rum-Laced Pecan Pie Recipe

Serves 8

Ingredients:

  • 9″ unbaked pie shell
  • 3 eggs
  • 1 cup dark brown sugar, packed
  • 1/2 cup dark corn syrup
  • 1/4 teaspoon salt
  • 6 tablespoons rum
  • 1/4 cup butter, melted
  • 1 cup chopped pecans
  • 1/2 cup heavy cream
  • 1 tablespoon sugar

Instructions:

  1. Preheat oven to 375°.
  2. Beat eggs until light colored.
  3. Add brown sugar, syrup, salt and 4 tablespoons of rum.
  4. Stir until dissolved.
  5. Add butter and pecans.  Mix.
  6. Pour into shell and bake 40 minutes or until knife inserted in center of pie comes out clean.  Cool.  Serve with heavy cream whipped with remaining 2 tablespoons of rum and 1 tablespoon of sugar.
