Prune Cake Recipe

Serves 8

Ingredients:

Cake

  • 3/4 cup butter or margarine
  • 1-1/2 cups sugar
  • 3 eggs
  • 2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 cup buttermilk
  • 1 cup pitted prunes, chopped

Frosting

  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • walnuts and cherries for garnish

Instructions:

  1. Preheat oven to 375 degrees.
  2. Cream butter until soft.
  3. Gradually add 1-1/2 cups sugar, beating until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Sift flour, baking powder, baking soda and seasonings, and add alternately with buttermilk.
  6. Fold in chopped prunes.
  7. Pour into 2 greased and floured 9″ layer pans or tube pan.
  8. Bake for 25 minutes (or 1 hour for a tube pan).
  9. Cool completely before frosting.
  10. Whip cream and sugar together until stiff.
  11. Add vanilla.
  12. Fill and frost layers with cream, and garnish with walnuts and cherries.
