Make Ahead
Serves 8
Ingredients:
Cake
- 1/2 cup shortening
- 1/2 cup sugar
- 4 egg yolks
- 1 cup cake flour, sifted
- 2 teaspoons baking powder
- 1/8 teaspoon salt
- 1 teaspoon vanilla
- 5 tablespoons milk
Topping
- 4 egg whites
- 1 cup sugar
- 1 teaspoon vanilla
- 3/4 cup nuts (optional)
Filling
- 1 cup heavy cream
- 1 cup crushed pineapple, drained
- 1/4 teaspoon vanilla
- 1-1/2 teaspoons confectioners’ sugar
Instructions:
- Preheat oven to 350°.
- Cream shortening and 1/2 cup sugar.
- Add egg yolks and mix thoroughly.
- Add cake flour, baking powder and salt alternately with 1 teaspoon vanilla mixed with milk.
- Pour into 2 heavily greased 9″ cake pans.
- Beat egg whites until stiff, then add 1 cup sugar and 1 teaspoon vanilla (and finely ground nuts, if desired).
- Spread half of whites on each cake layer.
- Bake until topping is brown (about 20-30 minutes), then remove from oven. Cool.
- Whip the cream.
- Add crushed pineapple, 1/4 teaspoon vanilla and confectioners’ sugar.
- Invert one of cake layers (meringue on bottom) and spread with pineapple filling.
- Top with second layer (meringue on top).
