Pecan Pie Squares Recipe

Ingredients:

Crust

  • 1 package (18-1/2 ounces) butter or yellow cake mix
  • 1 egg
  • 1/2 cup butter or margarine, melted

Filling

  • 2/3 cup reserved cake mix
  • 1/2 cup firmly packed brown
  • sugar
  • 3 eggs
  • 1-1/2 cups dark corn syrup
  • 1 teaspoon vanilla
  • 1 cup chopped pecans

Instructions:

Crust

  1. Preheat oven to 350°.
  2. Generously grease the bottom and sides of a 13″x9″ baking pan.
  3. Reserve 2/3 cup dry cake mix for filling.
  4. Combine the remaining cake mix in a large mixing bowl with the egg and melted butter.
  5. Mix well and press into prepared baking pan.
  6. Bake 15-20 minutes or until light golden brown.

Filling

  1. Combine all filling ingredients except pecans, and beat at medium speed for 1-2 minutes.
  2. Pour over warm crust and sprinkle with chopped nuts.
  3. Return to oven and bake an additional 30-35 minutes or until filling is set.
  4. Cool before cutting into squares.
  5. May be served warm with ice cream.
