Mint Frosted Brownies

Ingredients:

Brownies

  • 3/4 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shortening
  • 2 squares unsweetened chocolate
  • 2 eggs
  • 1 cup sugar
  • 1 tablespoon water
  • 1 teaspoon vanilla
  • 2/3 cup chopped nuts

Frosting

  • 1 cup confectioners’ sugar
  • 2 tablespoons margarine
  • 1 tablespoon cream (half and half)
  • 1/4 teaspoon mint extract
  • green food color

Glaze

  • 1 square (1 ounce) unsweetened chocolate
  • 1 teaspoon margarine

Instructions:

Brownies

  1. Preheat oven to 350°.
  2. Mix together dry ingredients and set aside.
  3. Melt shortening and chocolate and cool.
  4. Stir in eggs, sugar and water, then dry ingredients.
  5. Beat well.
  6. Add vanilla and nuts.
  7. Bake in a greased 8″ square pan for 25 minutes.
  8. Cool in pan.

Frosting

  1. Blend confectioners’ sugar, margarine, cream, extract and food color.
  2. Frost cooled brownies.
  3. Refrigerate 10 minutes to set.

Glaze

  1. Melt 1 square chocolate with 1 teaspoon margarine for glaze.
  2. Pour over one end of pan and tilt to cause to flow to opposite side of pan or drizzle on top of brownies.
  3. Cut in small squares.
