Make Ahead
Serves 6
Ingredients:
- 1 can (29 ounces) peach slices or halves
- 1/2 cup butter or margarine, melted
- 1/2 cup miniature marshmallows
- 1/2 cup chopped pecans
- 1 cup sifted flour
- 1/2 cup sugar
- 1-1/2 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- vanilla ice cream
Instructions:
- Preheat oven to 350 degrees.
- Drain peaches into a medium bowl and dice the fruit.
- Return peaches to syrup and add melted butter and marshmallows.
- Pour into a 9″ square baking dish and sprinkle the top with pecans.
- Sift flour, sugar, baking powder, cinnamon and salt and sprinkle over the pecans, mixing lightly.
- Bake for 50 minutes or until the top is golden.
- Serve warm with ice cream.
