Chiffon Lime Pie Recipe

Ingredients:

  • 9″ baked pie shell
  • 4 eggs, separated
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon grated lime rind
  • 1/3 cup lime juice
  • 4 tablespoons water green food color
  • 1 tablespoon unflavored gelatin
  • 1 cup heavy cream, whipped
  • whipped cream for garnish

Instructions:

  1. Combine lightly beaten egg yolks with 1/2 cup sugar, salt, lime rind (save some rind for garnish), lime juice and 2 tablespoons water.
  2. Add a few drops green food color.
  3. Cook over boiling water, stirring constantly, until mixture thickens.
  4. Soften the gelatin in 2 tablespoons cold water and add to the mixture.
  5. Remove from heat and cool until mixture begins to thicken.
  6. While cooling, mix the egg whites and remaining 1/2 cup sugar, and beat until stiff.
  7. Fold the lime gelatin mixture, whipped cream and the beaten egg whites together until blended.
  8. Turn into the prepared pie shell.
  9. Chill until firm.
  10. When ready to serve, garnish with whipped cream and grated lime rind.
