Make Ahead
Yield: 2-3 dozen
Ingredients:
Crust
- 2 cups flour
- 1/2 cup sugar
- 1 cup butter
Filling
- 2 cups sugar
- 1/3 cup lemon juice
- 1/4 cup flour
- 1/2 teaspoon baking powder
- 4 eggs, beaten
- few drops yellow food color (optional)
- confectioners’ sugar (optional)
Instructions:
- Preheat oven to 350 degrees.
- Mix flour and sugar together, then cut in butter as for pastry.
- Press into bottom of a 9″x13″ baking pan and bake 20-25 minutes or until lightly browned.
- While the crust is baking, prepare the filling.
- Mix all the filling ingredients (except confectioners’ sugar) together and pour over baked crust.
- Return to oven and bake for an additional 25 minutes.
- Cool completely before cutting into squares.
- Dust with confectioners’ sugar.
