Make Ahead
Serves 6
Ingredients:
- 2 cups milk
- 1/2 cup grapenuts (not flakes)
- 3/4 cup sugar
- 2 eggs, beaten
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla
- ice cream or whipped cream for garnish
Instructions:
- Preheat oven to 350°.
- Scald milk, and add grapenuts.
- Set aside to soak until grapenuts are softened (about 5 minutes).
- Add the sugar, eggs, salt and vanilla.
- Stir to make sure sugar is dissolved.
- Pour mixture into a well-greased souffle dish or 9″ round layer pan.
- Bake for 45 minutes. Pudding will puff up while it is baking, and is done when a knife inserted in center comes out clean.
- Serve warm with ice cream or sweetened whipped cream.
