Serves 4

Ingredients:

  • 4 crepes
  • 4 golden apples
  • 1-1/2 cups light brown sugar
  • 2 tablespoons butter
  • 1/2 cup applejack
  • creme Anglaise (recipe here)
  • whipped cream flavored with vanilla

Instructions:

  1. Make 4 crepe pancakes according to your favorite recipe.
  2. Peel and core each apple and cut into 6 slices.
  3. Melt brown sugar over medium heat, being careful not to burn.
  4. Add apple sections and continue cooking until apples are just tender.
  5. When done, add 2 tablespoons butter and applejack.
  6. Warm each crepe in the apple syrup then roll with 6 slices of apple in each crepe.
  7. Mix Creme Anglaise and whipped cream together, and pour over each crepe before serving.
