Cointreau Cake Recipe

Ingredients:

Cake

  • 1 package Duncan Hines Lemon Supreme cake mix
  • 1 package instant vanilla pudding
  • 1/2 cup vegetable oil
  • 1 cup sour cream
  • 2 tablespoons fresh orange juice
  • rind from 1/2 orange, grated
  • 4 eggs

Topping

  • 1/2 cup fresh orange juice
  • 1/2 cup confectioners’ sugar
  • 3 tablespoons Cointreau

Instructions:

  1. Preheat oven to 350°.
  2. Mix together all cake ingredients except eggs.
  3. Add eggs, one at a time, beating at low speed for 10 minutes.
  4. Pour into a lightly oiled and floured bundt or tube pan.
  5. Bake for 50-55 minutes.
  6. Mix together 1/2 cup fresh orange juice, confectioners’ sugar and Cointreau.
  7. After baking the cake, and while it is still hot in the pan, spoon half the topping over the top.
  8. After removing the cake from the pan and while warm, spoon the remaining topping over cake.
