Coffee Souffle Recipe

Ingredients:

  • 1 tablespoon unflavored gelatin
  • 3/4 cup cold water
  • 2 teaspoons instant coffee
  • 4 egg yolks
  • 1 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 4 egg whites
  • 1 cup heavy cream, whipped
  • whipped cream for garnish
  • nutmeg for garnish

Instructions:

  1. Soften gelatin in 1/4 cup water.
  2. Dissolve coffee in remaining 1/2 cup cold water.
  3. Beat egg yolks until pale yellow.
  4. Mix with coffee, 1/2 cup sugar, and salt.
  5. Cook in top of double boiler over hot (not boiling) water until custard thickens.
  6. Remove from heat.
  7. Add gelatin, stirring until it dissolves.
  8. Add vanilla.
  9. Cool.
  10. Beat egg whites until stiff.
  11. Fold in remaining 1/2 cup sugar.
  12. Combine coffee custard and whipped cream.
  13. Fold in egg whites.
  14. Pour into 4-cup mold and chill 2-3 hours until firm.
  15. Unmold souffle onto round platter.
  16. Garnish with whipped cream and sprinkle nutmeg on top.
