Make Ahead
Serves 4
Ingredients:
- 20 marshmallows
- 1/2 cup strong coffee
- 1 pint heavy cream
- 3/4 teaspoon vanilla
Instructions:
- Melt marshmallows in pan with coffee (do not boil).
- Smooth with egg beater when fully melted.
- In separate bowl, whip cream and vanilla.
- Fold in coffee mixture.
- Put in 4 glass bowls or individual parfait glasses.
- Chill.
