Chocolate Omelet Recipe

Ingredients:

  • 4 eggs, separated
  • 2 tablespoons water
  • 3/4 cup semi-sweet chocolate chips, melted and cooled
  • 1/4 cup confectioners’ sugar, sifted
  • 1/2 cup sour cream
  • 1 tablespoon butter
  • 1/2 cup whipping cream
  • 2 tablespoons creme de cacao (optional)
  • chocolate curls for garnish

Instructions:

  1. Preheat oven to 325°.
  2. Beat egg whites until frothy.
  3. Add water, beating until stiff peaks form.
  4. In separate bowl, beat egg yolks until lemon colored.
  5. Add chocolate, sugar and sour cream, beating until smooth.
  6. Fold yolk mixture into egg whites.
  7. Melt butter in a 10″ oven-proof skillet.
  8. Heat until a drop of water in the skillet sizzles.
  9. Pour mixture into skillet, spreading evenly to edges.
  10. Reduce heat to low and cook for 6 minutes.
  11. Place mixture in oven for 10-15 minutes, or until knife inserted in center comes out clean.
  12. Meanwhile, whip cream.
  13. Stir in creme de cacao, if desired.
  14. When omelet is done, remove from oven, loosen around edges with a knife, and invert onto warm platter.
  15. Sprinkle with additional confectioners’ sugar and serve with whipped cream.
  16. Garnish with chocolate curls, if desired.
