Cherries Jubilee Recipe

Serves 6

Ingredients:

  • 1/3 cup sugar
  • 2 tablespoons cornstarch
  • 1/8 teaspoon salt
  • 1 cup cherry syrup (drained from can)
  • 1-1/2 cups pitted Bing (or sweet) cherries, drained
  • 2 teaspoons lemon juice
  • 1/4 teaspoon grated orange rind
  • 1/4 teaspoon almond extract
  • 1/3 cup brandy or kirsch
  • 2 pints vanilla ice cream
  • 1/3 cup slivered almonds, toasted (optional)

Instructions:

  1. Mix sugar, cornstarch, salt and cherry syrup together in blazer pan of chafing dish.
  2. Place over direct high flame and cook until sauce is clear and slightly thickened, stirring constantly.
  3. Stir in cherries, lemon juice, orange rind, extract and 2 tablespoons brandy.
  4. Heat.
  5. Place pan in water jacket to keep hot for serving.
  6. Before serving, place rest of brandy over sauce and ignite.
  7. When flame dies, spoon onto vanilla ice cream.
  8. Sprinkle with toasted almonds.
