Make Ahead
Serves 8
Ingredients:
Cookie Crust
- 3/4 package Lorna Doone cookies (28 cookies)
- 1/4 cup butter, melted
Filling
- 2 eggs
- 2 8-ounce packages cream
- cheese, softened
- 1 teaspoon vanilla
- 1/2 cup sugar
- cinnamon
Topping
- 1 cup sour cream
- 2 tablespoons sugar
- 1/2 teaspoon vanilla
Instructions:
- Crush cookies and mix with melted butter.
- Press into a 9″ pyrex pie plate to form a crust.
- Set aside.
- Preheat oven to 375°.
- Beat eggs at low speed with electric mixer.
- Add cream cheese, vanilla and 1/2 cup sugar.
- Beat until creamy.
- Pour into pie shell and bake for 20 minutes.
- Remove from oven and while still warm, sprinkle with cinnamon.
- Allow to cool.
- Preheat oven to 375°.
- Mix sour cream, 2 tablespoons sugar and vanilla and carefully spread over cinnamon-topped cheese pie.
- Bake pie an additional 5 minutes.
- Remove from oven and allow to cool slightly.
- Refrigerate for 24 hours.
