Make Ahead
Yield: 2 dozen
Ingredients:
Brownies
- 1 cup margarine
- 1 cup water
- 1/3 cup cocoa
- 2 cups flour
- 2 cups sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup buttermilk
- 2 eggs, slightly beaten
- 1-1/2 teaspoons vanilla
Frosting
- 4 tablespoons margarine
- 1/4 cup cocoa
- 1/4 cup buttermilk
- 1 teaspoon vanilla
- 2-1/4 cups sifted
- confectioners’ sugar
Instructions:
Brownies
- Preheat oven to 400°.
- In a large saucepan combine margarine, water and cocoa.
- Cook and stir until mixture comes to a boil. Remove from heat and set aside.
- In a large bowl, stir together flour, sugar, baking soda and salt.
- Add buttermilk, eggs and vanilla and beat until smooth.
- Stir batter into hot cocoa mixture by hand until well combined.
- Pour into a greased and floured jelly roll pan (15″x10″).
- Bake for 20 minutes.
- While brownies are warm, pour the frosting over them.
Frosting
Note: This rich, fudgy frosting may be used on any of your favorite cakes.
- To make frosting, combine margarine, cocoa and buttermilk in a saucepan.
- Bring to a boil, then remove from heat.
- Stir in vanilla and confectioners’ sugar.
- Immediately pour over the brownies, spreading to edges.
- If frosting becomes too hard to spread, return to the “warm” burner for a few minutes, stirring constantly.
- Cut brownies when cool.
