Angel Food Cake and Frosting Recipe

Ingredients:

Cake

  • 1 cup sifted cake flour
  • 1-1/2 cups sugar, sifted twice
  • 1-1/2 cups egg whites (about 12 eggs)
  • 1/4 teaspoon salt
  • 1-1/3 teaspoons cream of tartar
  • 1 teaspoon flavoring (vanilla or almond)

Frosting

  • 1 pint heavy cream
  • 3 egg yolks
  • 1/4-1/3 cup chocolate syrup
  • 1/2 cup slivered almonds for garnish
  • chocolate curls for garnish

Instructions:

  1. Preheat oven to 325°.
  2. Sift flour three times with 1/2 cup sugar.
  3. Beat egg whites until frothy.
  4. Add salt and cream of tartar.
  5. Beat again until glossy and just stiff enough to hold a peak.
  6. Sprinkle 2 tablespoons of remaining sugar at a time and gently beat in.
  7. Fold in flavoring.
  8. Sift 2 table-spoons at a time of flour and sugar mixture over egg white mixture, then fold in gently.
  9. Repeat until folded thoroughly.
  10. Cut through batter with a spatula to remove air bubbles.
  11. Bake in an ungreased angel food pan for 60-65 minutes.
  12. Invert pan to cool.
  13. When cool, loosen cake with thin-bladed knife.

Angel Food Cake Frosting

  1. Slice angel food cake into 3 equal layers.
  2. Whip cream.
  3. Beat egg yolks and add chocolate syrup, then add this to the whipped cream.
  4. Frost all layers and chill for several hours.
  5. Garnish with slivered almonds and chocolate curls.
