Make Ahead
Serves 6-8
Ingredients:
- 3 egg whites
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon vanilla
- 20 Ritz crackers
- crushed 1/2 cup walnuts
- chopped whipped cream
Instructions:
- Preheat oven to 350°.
- Butter and flour a 9″ pie tin.
- Beat egg whites until stiff.
- Fold in sugar, baking powder, vanilla and crushed crackers.
- Add walnuts.
- Put into pie tin and bake for 25 minutes.
- When cool, cover with whipped cream and chill.
