Ingredients:
- 1-1/2 cups finely crushed chocolate wafers
- 1/3 cup butter, melted
- 1 large package (8 ounces) cream cheese, softened
- 3/4 cup sugar
- 1 teaspoon vanilla
- 2 eggs, separated
- 1 package (6 ounces)
- chocolate chips, melted
- 1 cup heavy cream, whipped
- 3/4 cup chopped pecans
Instructions:
- Preheat oven to 325 degrees.
- Combine wafers and melted butter.
- Press into 9″ spring-form pan.
- Bake for 10 minutes.
- Combine cream cheese with 1/4 cup sugar and vanilla until well blended.
- Add 2 well-beaten egg yolks and melted chocolate chips.
- Beat 2 egg whites to soft peaks and add 1/2 cup sugar, beating gradually until stiff peaks form.
- Fold beaten egg whites into cream mixture.
- Then fold in whipped cream and pecans.
- Pour over crust and freeze.
