Rum Coffee Pie Recipe

This delicious New Zealand dessert may also be served in parfait or champagne glasses and garnished with whipped cream and chocolate curls.

Serves 8

Ingredients:

  • 10″ graham cracker pie shell
  • 1 can (13 ounces) evaporated milk
  • 1 tablespoon unflavored gelatin
  • 1/2 cup hot water
  • 1 cup sugar
  • 1 tablespoon cocoa
  • 1 tablespoon instant coffee
  • 1 tablespoon rum
  • 1/2 cup walnuts, chopped finely
  • whipped cream for topping

Instructions:

  1. Chill can of milk at least 8 hours.
  2. Dissolve gelatin in 1/2 cup hot water.
  3. Whip chilled milk until thick, then slowly add sugar, cocoa, coffee, gelatin and rum.
  4. Whip again until thick and creamy.
  5. Add the chopped nuts and pour into graham cracker crust.
  6. Chill.
  7. Serve garnished with whipped cream.

Note: If mixing bowl and beaters are chilled overnight in freezer, batter will thicken more easily.
