Pumpkin Cake Recipe

Ingredients:

  • 2 cups sugar
  • 1-1/4 cups vegetable oil
  • 1-1/2 cups pumpkin puree
  • 4 eggs
  • 3 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1/2 cup seedless raisins
  • 1/2 cup golden raisins
  • 1 cup chopped walnuts or pecans

Instructions:

  1. Preheat oven to 350 degrees.
  2. Beat sugar, oil and pumpkin at medium speed until well mixed.
  3. Add eggs, one at a time, beating well after each addition.
  4. Sift flour, baking powder, baking soda, cinnamon, and salt and fold into cake batter.
  5. Stir in raisins and nuts.
  6. Pour into a greased 10″ tube pan and bake for 1-1/4 hours, or until done.  Do not open oven before 1 hour has passed.
  7. Let cool slightly before turning out onto a rack.
