Make Ahead
Serves 8
Ingredients:
Cake
- 3/4 cup butter or margarine
- 1-1/2 cups sugar
- 3 eggs
- 2 cups sifted flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1 cup buttermilk
- 1 cup pitted prunes, chopped
Frosting
- 1 cup heavy cream
- 1/4 cup sugar
- 1 teaspoon vanilla
- walnuts and cherries for garnish
Instructions:
- Preheat oven to 375 degrees.
- Cream butter until soft.
- Gradually add 1-1/2 cups sugar, beating until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Sift flour, baking powder, baking soda and seasonings, and add alternately with buttermilk.
- Fold in chopped prunes.
- Pour into 2 greased and floured 9″ layer pans or tube pan.
- Bake for 25 minutes (or 1 hour for a tube pan).
- Cool completely before frosting.
- Whip cream and sugar together until stiff.
- Add vanilla.
- Fill and frost layers with cream, and garnish with walnuts and cherries.
