Just right for brunch or a luncheon.

Yield: 1-2 dozen
Ingredients:
- 1 cup butter
- 2 cups sifted confectioners’ sugar
- 4 squares unsweetened chocolate, melted
- 4 eggs
- 2 teaspoons vanilla
- 2 teaspoons peppermint
- flavoring or creme de menthe
- 1 cup vanilla wafer crumbs
Instructions:
- Cream butter and sugar until light and fluffy.
- Gradually add melted chocolate.
- Add eggs one at a time, beating thoroughly after each addition.
- Add vanilla and peppermint.
- Sprinkle half the wafer crumbs into 12 large or 24 small cupcake liners.
- Add filling and top with remaining wafer crumbs.
- Freeze until firm (about 1 hour).
- Serve frozen.
