Peppermint Frangos Recipe

Just right for brunch or a luncheon.

Difficulty: Easy
Yield: 1-2 dozen

Ingredients:

  • 1 cup butter
  • 2 cups sifted confectioners’ sugar
  • 4 squares unsweetened chocolate, melted
  • 4 eggs
  • 2 teaspoons vanilla
  • 2 teaspoons peppermint
  • flavoring or creme de menthe
  • 1 cup vanilla wafer crumbs

Instructions:

  1. Cream butter and sugar until light and fluffy.
  2. Gradually add melted chocolate.
  3. Add eggs one at a time, beating thoroughly after each addition.
  4. Add vanilla and peppermint.
  5. Sprinkle half the wafer crumbs into 12 large or 24 small cupcake liners.
  6. Add filling and top with remaining wafer crumbs.
  7. Freeze until firm (about 1 hour).
  8. Serve frozen.
