Eggnog Tarts Recipe

If you top with red and green candied cherries, this is perfect for a holiday buffet.

Make Ahead
Serves 12

Ingredients:

  • 12 baked tart shells
  • 1 package (3-1/4 ounces) vanilla pudding mix
  • 1 envelope unflavored gelatin
  • dash of ground nutmeg
  • 3 cups fresh eggnog
  • 1/4 cup light rum
  • 1/2 cup whipping cream, whipped

Instructions:

  1. In saucepan, combine pudding mix, gelatin and nutmeg.  Add eggnog.
  2. Cook according to pudding package directions.
  3. Remove from heat; stir in rum.
  4. Chill until partially set.
  5. Turn into large mixing bowl.
  6. Beat with electric mixer until fluffy.
  7. Fold in whipped cream.
  8. Chill until mixture mounds.
  9. Pile into 12 tart shells.
  10. Chill.
