Make Ahead
Serves 8
Ingredients:
- pastry for 9″ double-crust pie
- 2/3 cup brown sugar, firmly packed
- 3 tablespoons flour
- 1/2 teaspoon salt
- 1/4 cup butter or margarine
- 1 tablespoon lemon juice
- 1/4 teaspoon vanilla or almond flavoring
- 2-1/2 cups fresh peaches, sliced
Instructions:
- Preheat oven to 400°.
- Line pie plate with bottom crust.
- In a saucepan combine brown sugar, flour, salt, butter, lemon juice and vanilla and bring to a rolling boil over medium heat, stirring constantly.
- Boil for 1 minute, then remove from heat and stir in the peach slices.
- Pour into pie shell.
- Cut remaining pastry in a lattice style and cover peach mixture.
- Bake for 40-45 minutes.
- If edge of pie becomes too brown too quickly, cover with a thin strip of foil.
