Named for the Russian dancer, this very elegant dessert is a favorite in New Zealand and Australia.

Ingredients:
- 3 egg whites
- 1 cup plus 1 tablespoon superfine sugar
- 1 teaspoon vanilla
- 1 teaspoon cornstarch
- 1 teaspoon vinegar
- 1/2 pint whipping cream, whipped
- 1 pint strawberries, washed, hulled and sliced OR kiwi fruit, peeled and sliced
Instructions:
- Preheat oven to 350 degrees.
- Beat egg whites until soft peaks form.
- Gradually add half the sugar, beating until meringue is glossy.
- Add vanilla, cornstarch and vinegar.
- Fold in remaining sugar and spread meringue in a circle (about 9″ diameter) on a lightly greased baking sheet.
- Bake for 5 minutes.
- Reduce heat to 250 degrees and bake for 1-1/2 hours more.
- Let meringue cool, then mound fruit in the center and top with whipped cream.
