These meringues turn out best if they are not made on a hot or humid day.

Make Ahead
Yield: 1 dozen
Ingredients:
- 4 egg whites
- 1/4 teaspoon salt
- 1-1/2 cups sugar
- 1/2 teaspoon vanilla
- 1 cup chopped nuts
- 3/4 cup dates, thinly sliced
Instructions:
- Preheat oven to 250°.
- Beat egg whites and salt until frothy.
- Add sugar gradually and beat until stiff.
- Beat in vanilla, and fold in nuts and dates.
- Drop by rounded teaspoons on greased cookie sheet.
- Bake for 30-45 minutes until firm.
