Meringue Christmas Cookies Recipe

Ingredients:

  • 2 egg whites at room temperature
  • 1/8 teaspoon salt
  • 1/8 teaspoon cream of tartar
  • 3/4 cup sugar
  • 1/2 teaspoon vanilla
  • 1 package (6 ounces) semi-sweet chocolate chips
  • 1 cup chopped nuts
  • 3 tablespoons crushed peppermint candy

Instructions:

  1. Preheat oven to 250°.
  2. In a small bowl, with an electric mixer at high speed, beat the egg whites until foamy.
  3. Add salt and cream of tartar and continue beating until soft peaks form.
  4. Add sugar, 1 tablespoon at a time, beating well after each addition.
  5. When meringue is stiff, fold in vanilla, chocolate chips, nuts and crushed peppermint.
  6. Drop by teaspoonfuls onto a lightly greased cookie sheet and bake for 40 minutes.
  7. Cool on a wire rack and store in an airtight container.
