Mamie’s Ice Box Cookies Recipe

Ingredients:

  • 2 eggs
  • 1 pound light brown sugar
  • 3/4 cup butter, melted
  • 1 teaspoon baking soda
  • 3-1/2 generous cups sifted flour
  • 2 teaspoons vanilla

Instructions:

  1. Cream eggs and brown sugar.
  2. Add butter, baking soda, flour, and vanilla.  Mix well.
  3. Chill overnight in a 9″x5″x3″ loaf pan lined with wax paper.
  4. Preheat oven to 350°.
  5. Slice 1/4″ thick, then divide into quarters.
  6. Bake on ungreased cookie sheet for 10 minutes or until light brown.
