Make Ahead
Serves 8-10

Ingredients:

  • 1 package (3 ounces) lime gelatin
  • 1-1/4 cups boiling water
  • 1/3 scant cup sugar
  • 1/4 cup lemon or lime juice
  • grated rind of 1 lemon
  • 1 large can evaporated milk, chilled in freezer 1 hour
  • green food color (optional)
  • 1 package (about 8 ounces)
  • chocolate wafers, crushed

Instructions:

  1. Dissolve gelatin in boiling water.
  2. Add sugar, juice and grated rind.
  3. Mix thoroughly and refrigerate until slightly thickened.
  4. In a chilled bowl with chilled beaters, whip the evaporated milk until stiff.
  5. Fold in gelatin mixture.
  6. Add a few drops of green food color, if desired.
  7. Pour into a buttered 10″ x 14′ pan which has been lined with the crushed chocolate wafers.
  8. Sprinkle top with additional chocolate crumbs and chill several hours or overnight.
