Lemon Cake Recipe

Ingredients:

  • 1 yellow cake mix
  • 4 egg yolks
  • 3/4 cup vegetable oil
  • 3/4 cup apricot nectar
  • 1 package (3 ounces) lemon gelatin
  • 2 tablespoons lemon flavoring
  • 4 egg whites, stiffly beaten
  • 1-1/2 cups confectioners’ sugar
  • juice of 2 lemons

Instructions:

  1. Preheat oven to 325°.
  2. Mix cake mix, egg yolks, oil, apricot nectar, gelatin and lemon flavoring.
  3. Fold in stiffly beaten egg whites.
  4. Pour into ungreased 9″ tube pan.
  5. Bake for 1 hour or until toothpick inserted in cake comes out clean.
  6. Mix confectioners’ sugar and lemon juice (may also add a little apricot nectar) and put on top of stove (not on burner) to warm from heat of oven while cooking cake.
  7. When cake is done, let it stand in the pan, right side up for 10 minutes.
  8. Remove from pan, prick with a fork all over, then spread with lemon mixture.
