Serves 8

Ingredients:

  • 1 quart milk, scalded
  • 5 tablespoons cornmeal
  • 2 tablespoons butter
  • 1 cup molasses
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 eggs, well beaten
  • 1 cup cold milk

Instructions:

  1. Preheat oven to 350°.
  2. Gradually add cornmeal to scalded milk.
  3. Cook for 20 minutes in top of double boiler, stirring constantly.
  4. Add butter, molasses, salt, cinnamon and eggs and stir to blend.
  5. Pour into a buttered baking dish.
  6. Pour cold milk over all and bake for 1 hour.
