Ingredients:
- 1 cup water
- 2 cups seedless raisins
- 1 cup shortening
- 2 cups sugar
- 3 eggs, beaten
- 1 teaspoon vanilla
- 1 cup chopped nuts (optional)
- 4 cups sifted flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 2 teaspoons salt
- 1-1/2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon allspice
Instructions:
Note: This recipe makes jumbo cookies. Reduce baking time for smaller cookies.
- Preheat oven to 375°.
- Boil water and raisins together for 5 minutes. Let cool.
- Cream shortening and sugar.
- Add eggs and beat well.
- Add vanilla and cooled raisin mixture, and nuts, if desired.
- Sift together the flour, baking powder, soda, salt and spices.
- Add to the raisin mixture and blend well.
- Drop by heaping teaspoonfuls on a greased cookie sheet and bake for 15 minutes.
