Since this is a one-crust pie, either halve the crust recipe or follow directions and store half in refrigerator. A few apples and raisins added to the peaches taste delicious, too!

Make Ahead
Serves 6-8
Ingredients:
Crust
- 1-1/2 cups flour
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon baking powder
- 3/4 cup shortening
- 3 tablespoons cold water
Filling
- 6-8 peaches, sliced
- 1/3 cup butter
- 1 cup sugar
- 1 egg, beaten
- 1/3 cup flour
- 1 teaspoon vanilla
Instructions:
- Sift flour, sugar, salt and baking powder.
- Cut in shortening and mix until dough has consistency of peas (or smaller).
- Add cold water and mix together to form dough.
- Roll out half of dough to cover pie tin.
- Preheat oven to 375 degrees.
- Put peaches in pie shell.
- Cream together butter and sugar.
- Add egg, flour and vanilla and mix well.
- Spread mixture over peaches.
- Bake about 1 hour or until thick in center.
