Freezes Well
Serves 8-10
Ingredients:
Cake
- 1 package Duncan Hines Lemon Supreme cake mix
- 1 package instant vanilla pudding
- 1/2 cup vegetable oil
- 1 cup sour cream
- 2 tablespoons fresh orange juice
- rind from 1/2 orange, grated
- 4 eggs
Topping
- 1/2 cup fresh orange juice
- 1/2 cup confectioners’ sugar
- 3 tablespoons Cointreau
Instructions:
- Preheat oven to 350°.
- Mix together all cake ingredients except eggs.
- Add eggs, one at a time, beating at low speed for 10 minutes.
- Pour into a lightly oiled and floured bundt or tube pan.
- Bake for 50-55 minutes.
- Mix together 1/2 cup fresh orange juice, confectioners’ sugar and Cointreau.
- After baking the cake, and while it is still hot in the pan, spoon half the topping over the top.
- After removing the cake from the pan and while warm, spoon the remaining topping over cake.
